Carrot Cake

Believed to be American origin, carrot cake started to become very popular in the 1950s, and continue as favourites today. The cream cheese frosting adds richness.

Finally, I make Carrot Cake again. Mark just finished his exam last Monday & I promised to make a cake to celebrate that.

It took me few hours to bake this cake, especially the preparation when grating the carrots & chopping the walnuts..phew! The baking time was also quite long, about an hour plus.

It's worth it after all. The cake is very moist, the taste is just perfect.
This one comes in round shape with approx. 21 cm diameter & 5 cm height.
